Fantastic Cuban food and it is such a unique dining experience for a place like Burlington. We made a reservation and it was a fairly busy Thursday night. The wait staff were knowledgeable and kind. It was a fairly large menu with lots of options. The water glasses were tiny. I would guess somewhere between 4 and 6 fluid ounces. We ordered the three chips app to start. Could tell it was house made and it was fresh and delicious but it was very small little pieces that made it harder to enjoy. We ordered the Creole shrimp with Maduros and tostones with yellow rice. The savory plantains and the sweet plantains are one of my favorite dishes and such a rare occasion allows for me to have them. These plantains did not disappoint and were cooked to perfection. The sauce on the shrimp was incredible and the rice, shrimp and sauce combo was a flavor paradise. We also got the vegan Cubano which was a little disappointing. Still we are very glad to see vegan options at all but it wasn't anything special. The menu said vegan Cubano sandwich but the default bread was not vegan (at least according to our waitress). To make it vegan you needed to ask for this other bread that they had that was also gluten free. So it was an extra 2 dollars to make the "vegan" sandwich actually vegan. Nonetheless the dinner experience was great as was the food and atomosphere. We will definitely return although it may be some time as the prices are on the higher end. If you enjoy Cuban food it is a place you should certainly try.

Yellow Rice
This is not "cuisine", this is assembly line production of incredibly over-priced food, small portions, weak drinks, and what seems like a New York reject of a restaurant business model where they could never get away with the pricing, portions, or taste. Everything is cheap and especially the food and portions (I'd also be seriously careful with the quality), though the atmosphere is decent (mostly because of the colors and location) and service was fine. The silverware, tables, chairs, cups even the size of the sides is crazy small. The "chandelier" is from Ikea. The note about the servers on the bottom with their names meant to solicit extra generous tipping for what is definitely not worth it besides the semi-decent view (they don't use the top half which would have the actual view). I could cook everything on their menu easily and much better at home, Cuban cuisine being Caribbean with different naming. I'll take my chances for "cuisine" at similar pricing with Hen of the Wood, Honey Road, or Starry Night Cafe. Waterworks too is way better, with an amazing view and ambience. It would be awesome though if new restaurants in Burlington did not rely on rapid and disproportionate profitability at the expense of quality.

Been wanting to try Santiago's for a while now but every time we tried to make reservations, there were no tables available. We decided to just try walking in and miraculously got a table. Food was delicious (pictured is the Stewed Beef with yellow rice, maduros, and red beans), drinks were phenomenal, and we had the key lime pie for dessert that is not your typical key lime pie (it's more fluffy and cakey, and has an amazing guava drizzle). Venue was a bit loud, they could do with some sound dampening. Service was average speed, but with amazingly friendly staff. Would definitely come back!

Me and my papa Jake (my friend) had an excellent time at this establishment! The food was incredible but the biggest shout out goes to our waitress Kaitlyn! She was super cool and helpful and attentive. Would go back again for the food, but would especially go back to see Kaitlyn.
