This is a cafe that offers a uniquely refreshing experience. House made baked goods, delicious coffee and lattes, and a really chill space makes me excited to visit on my slow Saturday mornings. Such a good croissant. Even better was there Rosemary Apricot Sourdough from their bakery. The coffee flight was super fun too. They have so many fun options, highly recommend to come here, everyone will find something they like.
Loved this place, as soon as I walked through the door. Fresh-baked bread & goodies were seemingly everywhere & they all looked so good!
Bakin' It Up Collective encompasses 2 storefronts, the left side, is the store part, where you can get all sorts of amazing baked goods, knick knacks, gourmet bagged coffee beans, & other eclectic items, plus they have a limited menu of foods they can prepare for you, in the back, like croissant sandwiches, & the like.
You can also order a nice variety of coffee & espresso drinks here.
The right side of this double storefront, contains cozy seating areas, spread nicely apart, where you can relax, while you sip your latte,' & nibble on your Blueberry Scone, or whatever you're lucky enough to buy, & eat here.
It was our first visit, for my wife & I, so we wanted to sample a few of their baked goods, while enjoying our coffee. We got a piece of Banana Walnut Bread, 1 Pistachio, White Chocolate & Cranberry Muffin, a Blueberry Scone, along with a loaf of their Sourdough Bread, which my wife was enticed to buy, since it was still warm, in the bag. We each got Americano Coffees, with my wife's being a Decaf version.
My honest opinion- This place is dangerous!!!
We loved everything we tried, including their piping hot, rich coffees. The sourdough loaf has this thin crispy outer shell, that your teeth will knife through, then make their way into the heart of the loaf, with bread that has the right taste & chewy texture. The Blueberry Scone was delicious! The scone was moist, & coated with a thin layer of sugar, plus I loved all the ripe, plump, juicy blueberries inside, while munching into small bites of this one. The Banana Bread was my second favorite, & the walnuts they add on top, are a nice texture changing touch.
We got friendly service, with the counter person offering to heat up our baked goods, plus she brought out our coffees, with a smile.

The best coffee and baked goods hands down! Very pleasant atmosphere with plenty of casual seating. I got the front window seating area and was able to watch the world go by. What a great morning! I'm not from Fallbrook, but was passing through last week and heard this place was a must try. So glad I did. I will be back next time in town for sure!
Love this place! Everything is fresh and amazing!! Locally sourced flavors, Kelly takes the time to create interesting and fun combinations for all types of palettes and restrictions (vegan, gluten free, nut allergies, etc.).
Bakin’ It Up Collective is the epitome of a small town success story AND their yumminess is off the charts! They are only open to the public Fridays & Saturdays right now so get their early and show them the love!
I have to hand it to a business that found a way to make it through the pandemic by focusing on partnerships with other local artisans and shops, catering events, private clients, and building relationships within the community. It’s time to buy local and build up our community… and if your favorite morning pastry isn’t on the menu ask as she has probably made it before. My personal favorite is her bread pudding… OMG!!!!

Pastries, cupcakes, coffee, brunch… try it all. We got the BLTA sandwich, a brownie, and a croissant. All bangin’. Pretty presentation, in a fun atmosphere. Loved it all, and can’t wait to come back.
