LE SAFRAN Restaurant was inspired by the pureness of the “Moroccan Queen of Spices”, and the love for creating fabulous Mediterranean cuisine and traditional dishes with our Chef’s obsession on local and seasonal highest quality products. In our Chef’s continuous search for the best local and seasonal ingredients to use in his kitchen, we traveled to the Ourika Valley at the foot of the Atlas Mountains, to a little village called Taliouine and met the people who harvest the precious saffron. Youssef Zeroual, our Chef declares: “Since I started to work as a young chef, my ultimate goal has always been not just to “cook” but use the “magic” of superb local ingredients to be able to arouse flavors that my guests would retain in their minds forever.” We invite you to embark on an unforgettable culinary experience in Rabat, where the best products we select from local farms and producers, along with sprinkles of Taliouine Saffron, are artfully prepared for you.
