We have been there for dinner and it is a very lovely restaurant, located in the centre of Valetta in the cellar (and the cellar goes much deeper). The food is excellent, one of the best rabbits, and the wine selection is very huge; everyone will find one for its individual price range. Service is very attentive and friendly. We were looking for a restaurant that wasn't your typical city centre, anywhere place. Something that represented Valletta, its history and offered a dining experience to match. We found it with Paul's Bistro. Set on top of and in, some of the town's original water cisterns, the venue was perfect. As was the food! Beautifully presented and more importantly tasting amazing, the food certainly matched the venue. We thoroughly enjoyed our evening at Paul's Bistro and would certainly go again. We ordered a fish plate for 2 and we got very delicious and fresh oysters, lobster, big shrimps, calamari, octopus, fish cakes, fried black risotto ball, fresh salad and tomatoes - so it's more a Seafood Jumbo :) The portion was really big and we enjoyed it with some Rose Wine. The restaurant has a big collection of good wines and beers - you can get a lot of inputs from talking to the friendly owner. And the building itself is truly very interesting. What a delightful restaurant. Was able to book a table online, but it wasn’t necessary. The owner and his wife were attentive and friendly. I had a pasta main dish and it was the perfect Al dente with a light sauce. Wine list includes Maltese wines. The setting was lovely. For one person, 3 courses with a glass of wine, I spent 65 euros. I visited this restaurant and it was not what I expected. The restaurant as such is quite unique and the atmosphere is fine, but I didn't feel very comfortable being there, there were only three tables downstairs, at the beginning there was no music and it was uncomfortably quiet, then they put some music and it got better. The food was nothing to impress, we ordered two starters, a beef pasta, which was a bit salty for my taste and a burratina with asparagus and ham, the burratina as such was very good, and was accompanied by a jam that was the perfect combination. Then for the main courses we ordered the ribeye and a risotto nero di sepia, the risotto didn't taste like calamari at all, it wasn't bad but it seemed anything but calamari risotto, and the meat I had to return it because I had ordered it medium rare and they brought it to me well cooked, so it took about 20 minutes more for them to bring it, this time it was very tasty and it was one of my favourite dishes of the night. Lastly, we ordered a tiramisu that they made for you at the table, and it wasn't very good. The service was quite good, we were served by a very nice guy, but I wouldn't go back again.
A stunning, hidden gem if you're searching for a peaceful dinner experience in Valletta! The facade of this restaurant doesn't do enough justice to the beautiful setting of the restaurant cellar and well. Excellent flavours, vast selection of wines, knowledgeable and courteous service. Makes for wanting to visit again!
Food of quality, nicely presented. The beef terderloin, perfectly cooked was amazing, duck correct. Service sometimes too slow and lack of knowledge about the wine, however nice and pleasant. Unusual place, we dined downstairs : a long time ago, it was a well. Enjoyable night! Excellent place for a pleasant evening and wonderful meal! We conducted a food tour of Malta led by Danielle at Oil&More and she not only recommended Pauls’ restaurant, she made us a reservation with the owner. Please check out the pictures and see the delicious meals that we all enjoyed! For wine we tried a local red from Malta and then a great primitivo from Italy. It was a fantastic meal. I had the scallops appetizer and lamb main. My son had the steak, my wife the duck. The others had pork belly and cod. Everyone loved their food and the preparation. Paul and his wife made us feel like family!
Among the best food I've had on this holiday and the best I've had in Malta. The staff is great. When my sister couldn't find anything vegetarian on the Menu the chef himself came and thought of something she might like (she did). The staff was constantly making sure we're satisfied. Prices are very much justified. Waiting time was fine, especially since it's so cozy you'll feel at home. Pleasant atmosphere. If you're still looking for a place to eat, look no further. You won't be disappointed.

An amazing dining experience. The food was impeccable, the atmosphere cosy and welcoming, and Paul (who is both the owner and the head chef) was the greatest host you could hope for. He also took the time to explain the history of the building we were dining in. A must try for anyone looking for fine dining in a historical ambience.
